Following the launch of our own clothing lines under the ‘One Buffalo’ brand, we have been searching for more ways to contribute to the growth of the city of Buffalo. Watching our parents develop businesses from scratch has inspired us to begin and develop this venture of our own.
A big part of The Healthy Scratch is showcasing the quality and benefits of healthy and clean eating. We believe that what you eat helps your mind and body, thus making you feel better inside and out. Traveling to so many places has helped us gain a greater understanding of the benefits of tasty, healthy food and beverages from around the world. We want to share these with our customers in creative ways that clearly communicate the health benefits of each menu.
Another thing we are focused on is catering to customers on-the-go. We strive to be the leading provider of quick, healthy food and beverage options with quality ingredients that our customers know they can trust. We offer a healthy dine-in or take-out experience for our customers.
We are extremely excited to have locations at both Harborcenter and Roswell Park. The continuing growth of both the Canalside district and the medical campus make both extremely exciting locations. The development of our region, the trends in the health food industry, and our passion for creating great tasting, fast, and healthy food alternatives, has made this venture all the more meaningful to us."

Jessie Pegula, professional tennis player, leads in the creation and development of the healthy food and beverage menu items, and overall business management. Jessie’s passion for health and wellness through organic food and beverages stems from her six-year professional sports career, consulting with experts in the health and wellness and sports industry, including tennis, NFL, NHL, and MLB professionals.
Kelly Pegula, college marketing student, leads in the design of apparel and overall merchandise sales and operations. Kelly and Jessie have successfully designed and launched clothing lines under the One Buffalo brand. Kelly has recently extended her men’s and women’s designs, in addition to partnering with New Era hat company to design both 59FIFTY and 39THIRTY caps.
